Kalmyks cuisine is very unusual, colorful and nutritious. The amazing Kalmyk people with a nomadic past have managed to create distinctive dishes that have captivated our guests for centuries. The Kalmyks' food of the late 19th and early 20th centuries was based on milk and meat, from which various dishes were prepared. At the same time, meat could be in the daily diet only for the more affluent part of the population. The Kalmyks' daily food consisted of milk and products made from it. Sour cream, cream, and butter were obtained from cow's milk. A significant proportion of the milk was used to make chigyan. Kalmyks did not drink vodka until they were very old. The distillation of chigyan into vodka was mainly carried out in order to obtain bozo, the so-called thicket remaining after smoking araki. Women used natural and pressed bozo to prepare a variety of dairy products and dishes: edmeg, kertseg, admag, shurmeg, khursun, etc. They also processed skins and fed pets. In the Volga and Caspian villages, fish dishes were the main food ration. Kalmyk tea, which was brewed with milk, butter and salt, and drunk with a flatbread, played an important role in the nutrition of the entire Kalmyk population. It was consumed daily. All the guests, without exception, regardless of social status, property status, gender, age and nationality, were first treated to tea by the Kalmyks and only then to other food.
